The Softest and Chewiest #FirstChristmas Gingerbread Cookies
Whenever life gets hectic, we all often resort to comfort food to help us fell better. This is the case for me this weekend, as my life has been extra crazy over the last week or so. Not only are these cookies warm, spicy, and delicious, they are Christmas-y to go with the rest of my series! This is also the first time I've made my own gingerbread so Christmas this year is really a first for a lot of things. I'm also breaking the rules here and giving you an 11 ingredient recipe (because it's my blog and I can do that). Still, a 10 ingredient recipe - if you use salted butter and take out the half teaspoon of salt. It's fine, let's pretend.
**Note to self** Next time read the full recipe BEFORE starting it... This one makes 3 dozen large cookies.. Oops. Cookies for everyone!!
These gingerbread cookies were SO easy to make, that we even made them without a stand/hand mixer. Just tons of muscle power and a little bit of crying along the way. I would recommend using a mixer... They are the perfect balance of spicy and sweet, and they are soft and chewy in the middle. If you wanted them to be crunchier, you can roll the dough out thinner and bake them for an extra minute or two. And find the original recipe here.
