The Lemon Poppy Seed Loaf That Will Make All Your Friends Jealous
The sun is shining and it is finally above freezing in Toronto. This April has been ridiculously cold, so any sign of spring/summer brings me so much joy (which is why my hair is substantially lighter now). And with spring comes fresh fruits and vegetables, meaning more sangria, more barbecuing, and more baked goods!
So, in typical Zoe fashion, I have found a 10-ingredient-or-less recipe for a fabulous lemon poppy seed loaf that will make your mouth water. It is just enough sour and just enough sweet, and SO easy to make. This recipe uses Greek yogurt for some added protein, making it a perfect treat for a healthy (and also sensible) lifestyle. Pairing lemon and poppy seed together is a match made in heaven, with the spring weather in mind. These flavours make me think of warm sunny days spent at the park or by the lake. Just throw a few slices of this beauty into a picnic basket, along with some nice wine, and you'll be sure to impress!
